Refined Brown Sugar 600–1200 : In addition to being the world’s top producer of ethanol and sugar, Brazil accounts for 48% of global sugar exports. It is also the world’s greatest producer of sugarcane. The abbreviation ICUMSA stands for the International Commission for Uniform Methods of Sugar Analysis, or, for the sake of free translation, the International Commission for Uniform Methods of Sugar Analysis.
Icumsa 600–1200, is made from 100% raw refined cane after it has first crystallized. This sugar, also called Icumsa 45, is brownish in hue and thicker than white sugar.

Beyond light and dark, there are many other types of brown sugar:
Raw sugar. This is cane sugar that’s less processed than regular table sugar. It keeps some of the naturally occurring molasses, giving it a golden color. It has large crystals and doesn’t melt very well. Varieties include demerara and turbinado.
Unrefined sugar. This is cane sugar that hasn’t had any of the molasses removed. It’s dark brown, with a strong flavor and high moisture content. The texture is sticky and sandy. It’s called different things in different parts of the world, including muscovado sugar, Barbados sugar, rapadura, panela, piloncillo, chancaca, jaggery, gur, and kokuto sugar.Free-flowing or granulated brown sugar. This is a type of brown sugar that has gone through a special process to remove nearly all the moisture so it doesn’t clump.
ICUMSA – Indicates color on scale from 600 (lighter) to 1200 (darker)
Sucrose content – Around 97-99%
Moisture – 0.5-6%, important for flowability
Dextrose/Fructose – 1-3%, from invert sugars
Sulphur Dioxide – Less than 70 ppm, from processing
Ash content – 0.5-2%, minerals from molasses
Granulation – Larger crystal size than white sugar
Microbiologicals – No Salmonella or E. coli. Low yeast and mold counts.
Heavy metals – Lead, arsenic, etc. must meet regulatory limits
Polarization – Measure of sucrose purity, around 99%
Solubility – Dissolves readily in water
pH – Neutral pH around 7.0 in solution
Colorants – None added artificially
GMO – Non-GMO sugar cane source
Shelf life – Up to 2 years under proper storage conditions
